Pineapple and Bilberry Jam

Pineapple and Bilberry Jam

about 8 jars per 200 ml

  • 300 g Dole pineapples (prepared weight)
  • 700 g Dole bilberries (prepared weight)
  • 1 pack Dr. Oetker citric acid
  • 1 pack Dr. Oetker Extra gelling sugar
  • ½ small bottle Dr. Oetker rum flavouring
How it is done

Peel pineapple, remove stalk, chop finely and weigh out 300 g.

Sort and wash bilberries and weigh out 700 g.

In a saucepan, mix the fruit and citric acid well with Extra gelling sugar.

Bring to the boil on high heat while stirring, and keep on a fast boil for at least 3 minutes, stirring constantly. Then stir in rum flavouring. Skim if necessary and fill prepared jars up to the rim.

Seal jars with Twist-off® lids, turn upside down and allow to stand on lids for about 5 minutes.

  • 700 g Dole pineapples (prepared weight)
  • 300 g nectarines (prepared weight)
  • 1 pack Dr. Oetker citric acid
  • 1 pack Dr. Oetker Extra gelling sugar
How it is done

Peel pineapple, remove stalk, chop finely and weigh out 700 g. Wash, pit and finely dice nectarines and weigh out 300 g.

In a saucepan, mix fruit and citric acid well with Extra gelling sugar. Bring to the boil on high heat while stirring, and keep on a fast boil for at least 3 minutes, stirring constantly. Skim if necessary and fill prepared jars up to the rim. Seal jars with Twist-off® lids, turn upside down and allow to stand on lids for about 5 minutes.

Pineapple and Peach Chutney

  • 450 g Dole pineapples (prepared weight)
  • 250 g peaches (prepared weight)
  • 100 ml white wine vinegar
  • 150 ml orange juice
  • 2 tsp curry powder
  • 1/2 pack Dr. Oetker Extra gelling sugar (250 g)
How it is done

In a saucepan, mix all ingredients well with Extra gelling sugar. Bring to the boil on high heat while stirring and boil for 5 minutes, stirring occasionally. Immediately pour chutney into prepared jars up to the rim. Seal jars with Twist-off® lids, turn upside down and allow to stand on lids for about 5 minutes.

Tip: Serve the chutney as an accompaniment to grilled chicken breast.

Apple and Pineapple Jam

Apple and Pineapple Jam

  • 500 g apples (prepared weight)
  • 500 g Dole pineapples (prepared weight)
  • 350 g sugar (white, brown, cane sugar or fructose)
  • 1 pack Dr. Oetker Gelfix Super
How it is done

Peel and finely chop apples and weigh out 500 g. Peel pineapple, remove stalk, chop finely and weigh out 500 g.

Put fruit in a saucepan. Mix sugar with Gelfix Super, then stir into the fruit mixture. Bring to the boil on a high heat while stirring, and keep on a fast boil for at least 3 minutes, stirring constantly. Skim if necessary and fill prepared jars up to the rim. Seal jars with Twist-off® lids, turn upside down andallow tostand on lids for about 5 minutes.

Tip: You can also replace the sugar with 25 ml liquid sweetener. To do this, put all ingredients in the saucepan at the same time.

  • 1 pack Dr. Oetker gelling sugar with
  • stevia sweetener
How it is done

Peel pineapples and remove stalks. Chop very finely and weigh out 1000 g.

In a saucepan, mix pineapple and bourbon vanilla sugar well with the gelling sugar with sweetener. Bring to the boil on a high heat while stirring, and keep on a fast boil for at least 3 minutes, stirring constantly. Skim if necessary and fill prepared jars up to the rim. Seal jars with Twist-off® lids, turn upside down andallow tostand on lids for about 5 minutes.

In a saucepan, mix fruit and juice well with gelling sugar for strawberry jam. Bring to the boil on a high heat while stirring, and keep on a fast boil for at least 3 minutes, stirring constantly. Skim if necessary and immediately fill prepared jars up to the rim. Seal jars with Twist-off® lids, turn upside down andallow tostand on lids for about 5 minutes.

  • 400 g redcurrants (prepared weight)
  • 400 g Dole pineapples (prepared weight)
  • 100 ml clear grape juice
  • 100 ml non-carbonated mineral water
  • 1/2 pack Dr. Oetker Extra gelling sugar (250 g)
How it is done

Wash redcurrants, strip berries off stems and weigh out 400 g. Peel pineapple, remove stalk, chop finely and weigh out 400 g.

In a saucepan, mix fruit, juice and water well with Extra gelling sugar. Bring to the boil on high heat while stirring, and keep on a fast boil for at least 3 minutes, stirring constantly. Skim if necessary and fill prepared jars up to the rim. Seal jars with Twist-off® lids, turn upside down and allow to stand on lids for about 5 minutes.

Tips: A small amount of blackcurrant nectar will give the compote a beautiful long-lasting colour. Serve the compote in a hollowed-out half pineapple and offer your guests some Dr. Oetker vanilla sauce with it.
